When Susan and Ellis Vandiver opened Red Wing Dove Vineyard in Hamilton County 20 years ago from vines started in their Plano back yard, they had no idea what the future would hold.
In their first several years of “retirement” in Hamilton County, their pampered Pinot Blanc and Shiraz vines thrived on the 80 sloped acres and produced premium grapes at a maximum production rate.
